Fresh-Mex & Co. signed a lease for a restaurant space in the Shoppes of St. Johns Parkway.
A fictitious name filed April 15 shows Fresh-Mex in 4,487 square feet of space in Suite 80, which had been X-Treme Wings.
Shoppes of St. Johns Parkway is at 120 Shops Boulevard at northwest St. Johns Parkway and County Road 210 in St. Johns County.
Michael and Amanda Toussaint founded Fresh-Mex at Bentley (then Bonneval) Road and Butler Boulevard near the Southpoint area in August 2017.
They closed that site in December 2022 after opening a restaurant in St. Johns Town Center in February 2022 and operating both for much of that year.
Amanda Toussaint said June 14 that the St. Johns County lease has been signed and build-out is starting.
She said new minority partner Mike Bryan will be handling the second location.
Toussaint said in April that Michael Toussaint was bringing on a minority partner to help grow the Fresh-Mex brand.
She said then that the St. Johns Parkway restaurant could open in September.
Landlord Sleiman Enterprises shows the space as available on a site brochure.
“We chose this location because it’s a very family-friendly area that is growing and up-and-coming and lacks restaurants that are fast casual, healthy and budget-friendly,” Toussaint said in April.
“We will have a full bar but with the large outdoor patio there will be a lot of space for families.”
She said Bryan is an entrepreneur who owns other businesses and would like to help expand the Fresh-Mex brand.
Fresh-Mex Tex-Mex Cantina sells fajitas, chimichangas, quesadillas, tacos, burritos, bowls, salads, starters and desserts. The Town Center location has a full bar.
