Scott Moore and Gus Evans opened their Maple Street Biscuit Co. a week ago at 2004 San Marco Blvd. It operates 7 a.m.-2 p.m. Monday-Saturday and also is open 5-9 p.m. Friday-Saturday. The biscuits are available plain, with toppings or with fillings. The many fillings include meat, eggs and cheese; fried chicken with goat cheese or pecan bacon or an egg with collard greens; pulled pork with slaw; and more. Side items and desserts also are on the menu. Customers are asked the name of their favorite band to identify their order. Wednesday morning, staff called out blink-182, the Rolling Stones and Led Zeppelin to pick up their food at the counter. Moore and Evans describe their menu as “inspired Southern comfort food with a modern twist.” Moore is a former Winn-Dixie Stores Inc. vice president and Evans is a former project manager at Elkins Constructors Inc.
